I have yet to ride a cafe but until someone more knowledgeable can correct me I see them as proto-crotch rockets: They sacrifice everything, especially comfort, in return for speed and handling, but don't do it nearly as well as modern sportbikes. I have to say that they look utterly gorgeous though. Building and rebuilding every single one of my bikes has definitely given me a better appreciation for all motorcycles.

It's just such a shame everyone is selling them as 'cafe racers' at 3-5 times their actual worth lately. Granted, they're not as quick or peppy as modern sportbikes, but they're hardly slow as elephants.

I say get a modern bike now and start saving up some money for a cheap non-runner or barely running cafe template bike. Start stock, then after a few thousand miles, when you have been riding enough to know what you actually want to change, you can mod the bejezzus out of it.

That way rather than just doing what looks cool, you can make actual functional upgrades. Sit on one if you get the chance. People will respond to various types of handlebars and handlebar positioning differently. That said, there are a few people who make custom cafe seats that are quite comfortable Google Benjie's Cafe Racer and Carpy's. It should be said that many, many manufacturers are aware of the recent resurgence of the cafe look, and that these bikes are quickly becoming quite popular.

There are a ton of great sites and retailers out there who make nice parts for a build.

It's not as hard to build a cafe racer today as it was twenty years ago, in some respects.
